Tea is the world’s second most popular beverage after coffee. Regular tea drinkers will notice dark brown tea scale clinging to the inner walls of cups and teapots. Tea lovers refer to this scale as "tea patina", comparing it to the aged coating on antiques, claiming it enhances tea aroma. However, rumors spread that tea scale contains heavy metals and nitrites, which damage human health if left uncleaned. There is even a folk saying: "If you skip washing your tea cup, the King of Hell will soon claim your life." What exactly is tea scale, and is it harmful to health?
Tea Scale Mainly Consists of Tea Polyphenols
Some people once believed tea scale forms when limescale (calcium carbonate or magnesium carbonate precipitates) absorbs pigments such as theaflavin and thearubigin. Others thought the floating film on tea liquid was wax from tea leaves. Both statements are inaccurate.
Experiments prove that tea scale is primarily composed of tea polyphenols, with a small amount of metal ions participating in its formation. Green tea contains higher levels of polyphenols and thus generates tea scale more easily, while fully fermented black tea and dark tea produce far less. The core composition of tea scale remains similar across all tea varieties.
Tea scale is a polymer produced by the oxidation of tea polyphenols upon exposure to air, accumulating mostly along the waterline on vessel walls. Research shows that the molecular weight of polymers in tea scale rises over time, indicating the slow ongoing polymerization of polyphenols. The longer tea steeps, the harder it is to remove accumulated scale.
No Harmful Heavy Metals Found in Tea Scale
An oily film with metallic luster often floats on overnight tea, misleading people into suspecting heavy metal contamination. Logically speaking, it is impossible for tea scale deposited from tea liquid to release heavy metals back into the infusion. This film shares nearly identical composition with cup-wall tea scale, dominated by polyphenol polymers with trace metal ions.
Elemental analysis reveals tea scale is overwhelmingly made of carbon and oxygen from polyphenol polymers, plus minor amounts of potassium, calcium, magnesium, aluminum, zinc, selenium and other elements. These metals exist as water-insoluble carbonates or hydroxides. Calcium, mainly sourced from brewing water, acts as the primary catalyst for scale formation. Toxic heavy metal pollutants including lead, arsenic, cadmium and mercury are not major components of tea scale, so tea drinkers have no cause for concern.
Methods to Reduce Tea Scale Accumulation
Although tea scale poses no health risks, many people dislike its unsightly appearance. The following tips can effectively cut down its buildup:
1. Rinse cups immediately after drinking tea to prevent scale deposition. Steeping tea overnight inevitably creates thick, stubborn patina.
2. Alkaline environments accelerate polyphenol oxidation and scale production. Adding a slice of lemon during brewing helps reduce scale formation. Foreign researchers found brewing one bag of English black tea yields more scale than two bags, while five bags produce almost none — likely because abundant tea polyphenols lower the pH of the tea liquid.
3. Calcium ions are critical to scale formation. Hard water rich in minerals creates heavy scale, whereas pure mineral water results in much less buildup.
4. The volume of tea scale depends on the contact area between tea liquid and air. Wide-mouthed cups generate more scale, and covering cups with lids limits air exposure to cut down scale growth.
With this knowledge, many tea drinkers may feel justified skipping frequent cup washing. If you still wish to scrub off tea scale, any cleaning method works, but avoid scraping the natural aged patina on purple clay teapots cherished by tea enthusiasts.
